Do you ever cook too much of a certain thing and then wonder, what in the world will I do with all of this? This was the case for me with some rice I cooked last week. I had cooked a meal for my family as well as the company we had coming over. I cooked more rice than I normally would since there would be a few more mouths to feed. Well, we didn't eat near the amount of rice I thought we would, so a large bowl of rice was put back into the refrigerator.
I am all about some leftovers, but sometimes I have to be in the mood for rice, you know what I mean? I almost always cook brown rice, which has more nutritional value than white rice. After several days in the fridge, not much of this leftover rice had not been eaten, and I hated to see it go to waste. I had also cooked a whole chicken in the crockpot on Sunday afternoon, and what I didn't put in the freezer after shredding that, I still had in the fridge as well.
Freezer meals, in my opinion, are the best thing ever and are simple to prep especially if you are already cooking one meal. I was thinking ahead, with a baby coming before too much longer and I thought, with these leftover ingredients plus a few more, I have a freezer meal! So here you go, a simple meal put together with some of your leftovers for a future weeknight (or weekend) dinner!
The cast of ingredients include:
- 1 1/2 - 2 cups cooked shredded chicken
- 2 cups cooked rice
- 2 cups black beans
- 2 tbs taco seasoning
- can of Rotel
- shredded cheese
You could use fewer beans or more rice. These were approximate measurements because they are leftovers.
Make it your own! Add corn, substitute beef or turkey for chicken, etc.
I just mixed all of these together in a large bowl, spread out in a greased aluminum pan and added some more cheese to the top.
Cover it with foil and label it with instructions. In the freezer, it goes!
I think this will be delicious paired with some chips and salsa or a spinach salad!
Do you ever think to double a recipe and put one in the freezer? Even freezing what you have leftover, you get tired of eating. I had rather freeze it than toss it!
