According to Dictionary.com, deliciousness is not a word, but there are many words in my vocabulary that probably aren't exactly words.  

This quick sheet pan meal is just that though.

You probably know by now we all love to cook, but I don't like to be in the kitchen for hours. I love the meals that require just a few chops and throw it in the pan, then in the oven. I know it isn't that quick, but you get what I mean. 

I have shared a recipe before that contains red potatoes, bell peppers, and kielbasa sausage. I have recently for the first time, roasted green beans. I mean the fresh long beans. I wasn't sure how they would turn out but to my surprise, they didn't disappoint! They don't take long at all to roast and have the perfect crunch. The red potatoes get a little crispy from the olive oil and my go to seasoning these days is just right. 

This time I decided to roast just the sausage and red potatoes on one pan by themselves. On another pan, I roasted the green beans along with some fresh mushrooms. 

Roasted Kielbasa and Red Potatoes

  • 1 lb. kielbasa sausage, cut into pieces
  • 4-5 small to medium red potatoes, chopped in wedges
  • Extra virgin olive oil
  • salt and pepper
  • seasoning of choice - I used Cavender's
  • Preheat oven to 400 degrees. 

Place chopped potatoes and sausage on a sheet pan and drizzle with olive oil. Add salt and pepper or seasoning of choice and mix well. 
Cook for 30-35 minutes until potatoes are cooked through, and sausage is browned on the edges. 

When the sausage and potatoes had about ten minutes left until they were done, I placed the green beans and mushrooms in the oven. 

Roasted Green Beans and Mushrooms

  • Half or whole bag of fresh green beans
  • 8 oz. fresh mushrooms, washed and sliced
  • Extra virgin olive oil
  • salt and pepper
  • seasoning of choice - again I used Cavender's 
  • Preheat oven to 400 degrees.

Place green beans and mushrooms on a  sheet pan and drizzle with olive oil. Add salt and pepper or seasoning of choice and mix well. 
Cook for 10-15 minutes until mushrooms are cooked through, and green beans are cooked through. 

This meal turned out DELICIOUS!!! 

Who doesn't love a meal they can put in the oven while they get something else done?! My son was grossed out by the mushrooms, lol. I LOVE mushrooms as long as they are cooked!
