Muffins and Granola Bars

I wish I could take the credit for half of the things I cook or bake, but I can't. Not yet at least. I have just arrived home from being at the beach all week, poor me right?! These recipes I am going to share were some things I made to take with us to eat and snack on while we were gone, but let's just say we had an abundance of food. 

My justification, other than you never know what you might need or want to eat; is, I already have this here, why not take it and I won't have to buy it when we get down there, right? That was my thought process, but my husband thought differently. On the way home, he says next time let's not bring so much and just buy some things when we get there! Thankfully, I still had food in my cabinets upon arriving home, so it wasn't like we came home to an empty kitchen. Although, I am working on a grocery list. Whew. 

These muffins were quite tasty, and I didn't feel guilty about eating them. The sweetest ingredient in them, other than the blueberries, was maple syrup. I love the original recipe from mynourishedhome.com

Blueberry Lemon Muffins

  • 3 cups whole wheat pastry flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 3/4 cup maple syrup
  • 2 eggs
  • 2/3 cup milk
  • 3/4 cup coconut oil
  • 1 lemon for zesting
  • 2 pints, or whatever looks good, fresh or frozen blueberries
  • Preheat oven to 400 degrees. Spray muffin pan or line with paper liners. Whisk flour, salt and baking powder in one bowl. 

Whisk liquefied coconut oil, egg, milk, maple syrup and lemon zest in another bowl until smooth. 
* Adding coconut oil to cold ingredients will make it turn solid. 
Stir liquid ingredients into flour mixture until moistened. Fold in the blueberries. 
Bake approximately 15 minutes.

These granola bars are super simple to make and only five ingredients! The original recipe calls for dates; I had prunes, so that's what I used instead. 
These held together much better than any other granola bars I have made. This yummy recipe is a must and the recipe is great from minimalistbaker.com
