You know what I like? Honesty. So let me be real for a bit.
Out of the 3 of us, I am not one to sit and ponder on something and try and make it healthier. I feel like sometimes you can do that and it tastes fantastic. Then at times, you're forcing it down lying through your teeth saying how good it taste; when you want to spit and gag. But your basically just eating it because you know it's "healthy".
Most of you know I am not a real small girl. Most days I am ok with that. I am just not ready to join the skinny girl club just yet. However, am I willing to join the "let's be healthy club"? Sure, who doesn't want to be healthy? However, there are those times where you don't give a flying carrot if it's healthy or not. You just want great tasting chemicals floating through your body! Yay, for bad food! I didn't use chemicals, well, not all chemicals. At least I don't think so.
Wanna know why I am being so real today?
I wanted blueberry muffins. Yes, you read that correctly, blueberry muffins. Why does that bring up all that information beforehand? Well, because as I was sitting and pondering on how I could make these from scratch and keep them somewhat healthy, I thought what the (insert ugly word). I want good ole fattening, TASTY blueberry muffins, that have the flavor busting out of the bakery. I didn't care if I should have used almond flour or coconut oil and milk. I just wanted to make them like back in the day like grandma made them on the farm. So I did.
I'm talking real WHITE flour and a STICK of butter. I know some of you are shuttering at the thought of that. At least they have honey and real fresh blueberries. That makes up for all the "other" stuff in it, right? Sure, I will come up with a healthier version, sometime. But for now, I wanted the real deal. Hopefully, the Lord doesn't decide to take me now, so I can at least enjoy these muffins thoroughly.
In a big bowl I added the softened butter, honey, vanilla, brown sugar, and the 2 eggs. I creamed that together until it was mixed thoroughly. I actually did all of this by hand instead of using a mixer. I found it to be just as easy and it was less dishes I had to wash later.
I then alternated the flour and milk. Starting with flour and ending with milk. While it's possible your supposed to do right opposite. This worked just fine for me. Make sure you mix thoroughly in between additions.
After the wet and dry ingredients were mixed together, I then folded in the blueberries. For the love, please don't add these to your mixer and turn it on. You will mutilate them and well if your gonna do that, just don't bother making them.
Add these to your greased muffin tin. and bake until your fork comes out clean. It should take about 20-25 min. at 350 degrees.
BLUEBERRY MUFFINS THAT ROCK YOUR WORLD
- 1 stick butter (softened)
- 2 cups self rising flour
- 1/3 cup brown sugar plus 2 TBS extra (for sprinkling)
- 2 eggs
- 2 TBS honey
- 1 tsp vanilla
- 1 -1/4 cup milk
- 1 pint of blueberries
Preheat your oven to 350 degrees
In a large bowl add your butter, eggs, brown sugar, honey, & vanilla. Mix well enough where it creams together. Remember I did all of this by hand, but you can use a mixer. Alternate by adding flour & milk until it is mixed well. Fold in your blueberries. Add your mixture to a greased muffin tin. Bake for about 20-25 min. until golden and a fork comes out clean. I stored these in the fridge, so that they would last longer. However, if you have a big family and know they will be eaten quick, just leave them out. You could even make mini muffins too and they are perfect for pop-able snacks!
