It's always hard for us to all get together so when we do, we try to make it count. We had a very productive weekend at that. I made "notes" and printed off a "plan" if you will for us to discuss some business matters. We still have A LOT more "meetings" to have, though. It seems you can never get in everything you want to in one day. If only we had a whole weekend retreat to get it all done. Seriously, though, who has time for that, especially when you have kids and a husband.
When the three of us do get together, we usually ALWAYS cook. Most of the time we are trying new recipes or Holly and Emily are excellent about planning for the week; such as breakfast.
We LOVE Mexican food here at our house. I mean really, who doesn't like a good ole kick in the butt with something hot.
One time, my husband ate a whole container of salsa we got at a restaurant. He then had to stay home from work the next day. True Story. End of story.
Who doesn't love snacking on tortilla chips, then add some salsa to that? Scrumptious! So that's what I made for us to snack on. This recipe is inspired by a dear friend of mine; we always talk food when we work together. She mentioned how she did hers, so naturally, I needed to try as well.
You can see the ingredients above, however, what you don't see is the extra jalapeño I added. I added one, tasted and then added another one. I could have added one more. However, I had kids eating this, and I didn't want their little mouths burning. There is lime juice and salt in the steel containers.
First, I added the tomatoes to the blender. This is vital buying the whole peeled tomatoes as well. I have tried it with the crushed, and it just has too much of a sweet taste. We love this brand as well.
Chop up your cilantro, add that to your tomatoes.
After you add that, chop up your jalapeños, onion, and garlic. Add that to your blender, then add your lime juice and your salt. You will probably have to add more salt as you blend and taste. I find that it is "add salt to taste" kind of recipe.
Make sure to blend all of the ingredients very well. Taste it and add more jalapeños, cilantro, garlic, onion, and salt or lime to taste. This is the great part of making homemade salsa, you can always add, but you can't take it away. So add a little, then later add more if you feel the taste isn't popping for you.
This salsa is even better with homemade chips. Sometimes I have time to make them, but when I don't, I can find "homemade" ones at our local Ingles store. My son loves them, just by themselves.
What is your favorite salsa recipe?
- 28 oz. can of Whole Peeled Plum Tomatoes
- cilantro (more to taste if needed)
- 1 onion (more to taste if needed)
- 3 cloves of garlic (more or less for taste)
- 2 fresh jalapeños (just cut the stems off, leaves seeds in, add more if need more heat)
- 1-2 Tablespoons of Lime Juice
- salt to taste
Chop up your onion, garlic, cilantro, and jalapeños. Add to the blender with your tomatoes, lime juice, salt. Blend. Taste, add more if needed of each ingredient. Enjoy with some tortilla chips.
