Almond Flour Chewy Chocolate Chip Cookies

Have you been craving something sweet, but don’t want the guilt of eating a high-calorie chocolate chip cookie? This savory, but sweet chocolate chip cookie recipe is how I reeled my husband in when we first start dating. He frequently gives me a reminder about these almond flour, to die for cookies. So, I am always trying to remake the recipe exactly how I made it the first time. Unfortunately, it never tastes them same. It seems that many of my recipes never taste the same the second time I make them. I can’t figure out what I’m doing wrong. Maybe it’s the humidity?

They may not necessarily be healthy, but the almond flour makes this a grain-free recipe. So, those opting for a lower carb cookie should give this one a try!

Here is the original recipe that won my husband over…

The recipe I am sharing today has a few modified ingredients giving it a more “nutty” flavor that my taste buds have been craving. My modified version of this recipe does contain a nut butter, so for those who have a nut allergy, the original recipe would be a better option for you.

I don’t know about you, but I am always looking for a good excuse to bake. So, my motive for baking these cookies was to show off my baking skills with my coworkers. I had to limit my husband from devouring them all by separating to different containers and hiding them so at least my coworkers had a chance to try a few.

I initially didn’t think my coworkers would enjoy the cookies since they are a little “different” than your average chocolate chip cookie. Needless to say, they have been begging for the recipe. So, I hope you enjoy these divine cookies as much as they did!

Almond Flour Chewy Chocolate Chip Cookies

  • 2 cups almond flour
  • ¼ tsp. salt
  • ¾ cup coconut sugar*
  • 1 tsp. baking soda
  • 2 tsp. vanilla
  • 1 egg
  • 6 Tbsp. coconut oil or butter
  • 6 Tbsp. sunflower butter**
  • 1 cup dark chocolate chips

Beat coconut oil (or butter) and sugar with hand mixer until creamed. Slowly beat in egg, vanilla, followed by nut butter. Once mixed, add dry ingredients and mix until just blended. Be careful not to overmix.

Stir in chocolate chips with spatula.

Refrigerate for about 30 min- 1 hr. (This is an optional step that I took that may or may not be necessary.) This will allow the dough to harden and easier to form into balls.

Form dough into small rounded balls and place 2-3 inches apart on an ungreased cookie sheet.

Place in oven for 10-12 minutes, depending on how chewy or crispy you want them. Do not overcook them. Remove from oven and allow to cool slightly before serving.

*This recipe works well with brown sugar in place of coconut sugar

**Any nut butter is acceptable; I just prefer the flavor and creaminess of sunbutter

It's time you all meet my loyal friend, Finley! The first picture made when we adopted him…he was so little!

This was taken today on our way to get some exercise in. He is getting so big and doing well with the whole leash-training process so far. Hoping he will be able to run with me soon!
