Life has been CRAZY lately! I don't know about yall, but I have been on the go these past two weeks. While it may be normal for some people, that is not usually the case with me. I am usually at home working 2-3 days a week. While I have been working, it just hasn't been at home. I sometimes sub at a preschool; then I go to my grandmothers twice a week as well. So needless to say I needed a small break. My body was becoming exhausted and feeling "sickly" and I mainly just needed more rest. So THANKFULLY! I was able to do that this past weekend. I loaded up on essential oils and after some rest, I was able to keep moving!
I headed to Auburn, AL to see my very best friend. Who BTW is pregnant with TRIPLETS!!!!! I know, I know. When she told me, I said, "Hold on just a minute, let me go take an anxiety pill." True story. So now that she is half way through this pregnancy, she is stocking up and getting ready for babies A, B,&C to get here. We went shopping for old dressers, out to eat, grilled out and more than anything caught up on each other's drama and enjoyed each others company.
So about that weather? I know, who wants small talk. But I don't know about you, but we here in Alabama are ready for some warmer weather to get here! All we have done is kept colds because we go from running our AC one day to building a fire the next day. I feel sure the Lord is showing or teaching us a lesson, I am just still trying to figure that out. Once the warm, hot, humid weather does get here, it will be a different story. One day at a time around here.
Since I am itching for summer weather, I thought what better way than to bring something so refreshing in the house. So that's what I did. I decided some strawberries, watermelon, honey, and stevia would be the perfect solution. A little "sorbet" if you will.
This makes an awful lot, so feel free to downsize this recipe. It also has a "melon" taste. While Holly was not crazy about it, Emily and I thought it was great and quite refreshing.
I froze this for several hours before finishing the recipe.
You can see how frozen they are, I added water of course to help blend it up, as well as lemon juice, honey and some stevia, after I tasted it. You could add more or less ingredients. Such as, you may prefer lime juice over lemon, or both. It would be great with some zest too!
*This makes a good bit, if you only want a small amount, use your common sense on dwindling down this recipe* or your eyes.....
- 6 cups of fresh cut watermelon
- 3 cups of fresh cut strawberries
- the juice of 2 lemons
- 2 TBS of Honey (I added 1 TBS of hot water to melt this)
- 2 small packets of Stevia (coffee packets)
- 1 1/2 cup of water
Cut up your watermelon and strawberries into chunks and put in a container and freeze until frozen. Then take your fruit out, add it to a blender, add your water and lemon juice. Then add your honey (mixed with hot water) and your stevia packets. You could enjoy at this time or put back in the freezer. This is perfect in a cup with a straw, or freeze it a bit more and add some homemade whipping cream to it.
*Add an adult beverage to this to have a "night off" and relax*
