You know how I made the chicken salad, well I also made some pimento cheese. Homemade that is. My Aunt tried to accuse me of taking it out of a container because it tasted just like her favorite store bought brand of Pimento Cheese. Sorry to say I did NOT buy it, I made it from scratch. I made it up as I went along. I did, however, measure ingredients so that I can share it with you all!
First, I put a 16 oz. of medium cheddar cheese through the food processor. I say medium because sometimes sharp can be so rich if you will.
I then added the cheese to a big mixing bowl.
After that, add the spices to it. Now these are crucial to the taste for sure. Cayenne Pepper, onion powder, salt, and pepper.
Mix the spices along with the cheese. Add the pimentos.
Then, add the mayonnaise, and you guessed it, Greek yogurt. I was nervous about adding Greek yogurt to the mix. I had never done that before. But sometimes too much mayonnaise makes me want to gag. So I tried it, and well I was pretty darn impressed, and I am glad I did use it. It is something that should not be overlooked.
Apparently, I forgot to take a picture of the finished product. I probably had already dug in and started eating this little piece of heaven. Now listen, don't think this is girls food! I have already had one person ask for the recipe, and not for herself, but for her husband because HE loved it so much!
- 16 OZ. Medium Cheddar Cheese
- 1/4 tsp. cayenne pepper
- 1/4 ts. onion powder
- 1/8 tsp. salt
- 1/4 tsp. pepper
- 3 TBS pimento's
- 1 cup mayonnaise
- 1/4 cup plain greek yogurt
Grate your cheese in the food processor, add your spices and pimentos along with all of the wet ingredients. Mix well and enjoy with some crackers.
